Anyone who knows me, will know of my love for desserts…be it sponge or cream , sweet, but not too sweet.

So when it comes to breakfast sometimes I just want a break from savoury egg options, but also I’m not quite in the mood for a smoothie.

Last night I tried combining some flavours and textures together with a good proportion of protein:

The mood was coffee, vanilla, Greek yogurt (which I made at home) with some chia seeds for fibre and a bit of extra protein.

First I made the espresso- using a trusted Nespresso pod, and allowed it to cool – actually I didn’t have the patience so I popped it into an ice bath! Next, I belnded, with a fork, 100g of Greek yogurt with a scoop of vanilla protein powder until it was creamy, I found I needed to add a dash of milk ( skimmed) here to get it going, then I added the cooled coffee and a tablespoon of chia seeds.

Poured the mix into a bowl , covered it and placed it in the fridge overnight.

I woke up to a ready breakfast bowl with a mousse like consistency, an extra dollop of Greek yogurt on the top to serve, I may try fruit next time!

Totally satisfying without feeling heavy and well on my way to achieving my protein goals for the day!
