The Silk Road Smoothie
There are some flavour combinations that seem to belong together.
Vanilla, coffee, cardamom and saffron are one of them.
For this smoothie, I wanted to take a little journey away from the usual breakfast combinations and bring some of the flavours of the ancient Silk Road into the kitchen.
The Silk Road wasn’t one single road, but a vast network of trade routes connecting East and West. Along those routes travelled precious spices, aromatic ingredients and, eventually, the flavours and traditions that would become part of the food cultures we know today.
Saffron and cardamom are two of those wonderfully evocative flavours. Fragrant, warming and slightly exotic, they instantly make me think of spice markets, little cafés and somewhere a very long way from my kitchen!
And then there is coffee.
The espresso brings everything back down to earth. Its bitterness balances the sweetness of the vanilla protein powder, while the cardamom gives it warmth and the saffron adds that unmistakable floral, honeyed note.
The result is creamy, fragrant and surprisingly sophisticated.
And yes! It still counts as breakfast.
The Silk Road Smoothie
Ingredients
● 200ml skimmed milk
● 1 scoop vanilla protein powder
● Double shot espresso
● ¼ tsp ground cardamom
● A generous pinch of saffron threads
● Ice
The method
Start with the milk, vanilla protein powder and cardamom. Blend until smooth and creamy.
Now for the saffron – and this little step is worth doing properly. I tried a number of methods and this one works best:
Place the saffron threads into a pestle and mortar and gently crush them. Add one ice cube and allow it to melt slowly over the saffron. As it melts, it helps draw out the colour, aroma and flavour from those precious little threads.
Take a tablespoon of the warm milk from your original 200ml quantity and add it to the saffron mixture. Give it a little stir and allow the saffron to infuse.
Add the saffron milk to the blended milk mixture, followed by the espresso. Stir everything together.
Fill a glass with ice, pour over the smoothie and serve.
The nutritional bit
Using skimmed milk and a vanilla protein powder providing approximately 27g protein per scoop, this smoothie gives you a pretty impressive nutritional start to the day.
Approximate nutrition per serving:
Calories: ~230 kcal
Protein: ~35g
Carbohydrates: ~20g
Fat: ~2g
The exact figures will depend on the protein powder and milk you use, but the important number for me here is that 35g-ish of protein from something that feels much more like a luxurious iced coffee than a protein breakfast.
And that, I think, is the whole point of these kitchen trials.
Food doesn’t have to feel like something we’re being good for eating.
It can be nourishing, delicious, interesting, and just a little bit indulgent too.
The Silk Road in a glass has really earned its place in the Hall of Fame!
