A little something for breakfast:
Anyone who knows me will know of my love for desserts….be it sponge or cream, sweet but not too sweet.
So when it comes to breakfast sometimes I want a break from the savoury egg options, but also not quite in the mood for a smoothie.
Last night I tried combining some flavours and textures together with a good proportion of protein:
The mood was coffee, vanilla, Greek yogurt which I made at home, with some chia seeds for fibre and a bit of extra protein.
First I made the espresso- using a trusted Nespresso pod, and allowed it to cool- actually I didn’t have the patience so I popped the glass in an ice bath!
Next I blended with a fork, 100g of Greek yogurt with a scoop of vanilla protein powder until it was creamy – I found I needed to add a dash of milk ( skimmed) to get it going, then I added the cooled coffee and a tablespoon of chia seeds. Poured into a bowl covered and refrigerated overnight.
I woke up to a ready breakfast bowl with a mouse like consistency, an extra dollop of Greek yogurt on the top.
Totally satisfying without feeling heavy and well on my way to achieving my protein goals for the day!

It’s basically a coffee dessert pretending to be a responsible adult breakfast!
